Salad Rich in Protein And Phytoestrogens “Only For Women After 40 Years”

When choosing our food, let’s focus not only on filling our stomachs but also on looking at the benefits that we will get from them. When I say only for women after 40, it is because it is here at this stage that estrogen begins to fail, and this salad has many ingredients loaded with  phytoestrogens and proteín that it will helps us maintain muscle mass and energy.

Ingredients for the salad: Lettuce, kale, pepper, broccoli, carrot, onion, mushrooms, purple cabbage, cucumber, roasted pumpkin seeds, roasted sesame seeds, dried cherries, cooked quinoa cooked chickpeas.

 Preparation: Personally, I prefer to soak the quinoa, drain the water  and cook, once the quinoa is cooked  I drain the water as much as possible then when the quinoa is cold it is the moment when it can be added with the ingredients that we are going to use, I repeat this process with the chickpeas. With the broccoli I prefer to put it in boiling water for less than a minute and immediately immerse in ice water  let the water drain ,apply the same process with previously chopped purple cabbage,  I love to this extra step to preserve the color of the vegetables. Once this is done, we proceed to prepare the other ingredients, the mushrooms washed them in water with a little himalaya salt and vinegar let them soak for a few minutes and also let it drain

My personal tip that I am going to share with you, “which in fact I discovered it very recently” is like preserving lettuce and not rusting before discovered this tip I could not prepare my salads before but today thanks to this I can prepare my salads for more than a week, without fear of spoiling. Cut the lettuce and wash it then put in a bowl with water and some drops of lemon for at least one minute put on the salad spinner and drain very well you can do it the same with the carrot once cut or grated. When all ingredients are completely washed and drained, mix only what you will eat. The rest of the ingredients you can stored in a salad container  in the refrigerator for a week without worries.

Ingredientes para la vinagreta de la ensalada :

Garlic, water, parsley, oregano, himalaya salt   olive oil , lemon, ground black pepper and mustard.

Preparation:

 

Cut the oregano and parsley into very thin pieces, crush the garlic and add the black pepper powder, mustard and olive oil and finally add the himalaya salt. Whisk until all the ingredients have been mixed this will give a yellow color and a very pleasant flavor.
